February 23 marks the exciting start of our maple syrup season! We will begin tapping on February 23, and will most likely tap for the next three days. Once tapped, the key is to have below freezing (26-27 degrees) temperatures at night with quick warming of the day (about 40-45 degrees).
Guess what the greatest running days are for us? Bright, beautiful and sunny? No! It is the miserable, rainy, muddy day that is when the sap flows!
