The sugar house officially hummed to life with sap flowing into the holding tanks ready for evaporation! we started cooking on Saturday and continued on Sunday. It was too cold Monday and the sap stayed tucked inside the trees. The video shows the crystal clear sap entering the first float pan of the evaporator.
